Carrot, Lentil and Ginger Soup

The soup recipe you can see in the Healthy Detox video with April Ivy!

Here you will find all the nutrients you need for a balanced meal, which helps you cleanse your body after a time of excess.

Ingredients

(about 4 portions)

  • 3 large carrots
  • 1 leek washed and sliced
  • 1 peeled white onion
  • 75 gr of red lentils
  • 2 cm of fresh ginger
  • Sea salt to taste
  • Juice of half a lime (optional)
  • Topping: sunflower and pumpkin seeds, lightly toasted.

Method

Peel the carrots and cut them into cubes.

Wash the leek well and cut into slices.

Peel and chop the onion and also the ginger.

Put all the vegetables and ginger in a pot with 100ml of water and bring it to low heat.

Cover and let stew for 5 minutes.

Add 500 ml of hot water and the lentils.

Season with salt and pepper.

Increase the intensity of the heat, let it boil.

Then reduce the heat and let it simmer for 20 minutes.

Blend well, until it becomes creamy.

Adjust the seasoning to your taste and add the lime juice if you choose to use it.

When you serve, sprinkle the soup with the seeds.

More recipes

This soup can serve as a model for other combinations, for example:

  • Replace the carrots with broccoli and spinach, and the orange lentils with green lentils.
    Replace the carrots with cauliflower, replace the lentils with white beans, and use 3 leeks instead of one. Use the juice of a whole lime at the end, to give the soup an additional touch of freshness.
    Instead of leeks use a celery stalk and half a fennel bulb.
