Cauliflower steaks? Yes, it’s a thing!
Cauliflower … a low key superfood.
We might mistakenly judge its value by the palor of its coloring. However, its many benefits totally justify that I spend a few hours researching new ways to cook it and trying things out for you.
The trendy ways to cook cauliflower
I am the one who will take steamed cauliflower anytime but I recognize there are sexier alternatives.
Well, there is cauliflower pizza, cauliflower rice, cauliflower wings … and cauliflower steak!
The latter caught my eye and I decided to try it.
I bought what I thought was a huge whole cauliflower but, after I took away all the outer leaves, turned out to be just a medium sized specimen.
The leaves, however, were many and huge, and did their part as the base of a nice broccoli soup…
Cauliflower steaks it is!
I took my trusted chef’s knife and cut two 1 cm thick “steaks” from the center of the cauliflower.
They looked good!
I decided to ad lib the seasoning, choosing my favorite spices – smoked paprika and powdered garlic – together with a mix of dry herbs that I also use quite ofter: Herbes de Provence.
I figured that if I was cooking “steaks”, the least I could do was to apply some meaty seasonings 😉
I’m glad I did it, because the end result was delicious!!
I ate both the steaks by myself, with a little salad and avocado on the side. Perfect low carb lunch for one!
Diet compliant
I’m not really dieting but for those of you who are, I would say this dish is as perfectly adequate for those following a vegan lifestyle as it is for a paleo one, and I would say it’s keto and Whole30 compliant as well.
For me, it ticks all the longevity boxes I value: antioxidant, anti-inflammatory, full of vitamin C and healthy fats!
The recipe? Here it goes:
Cauliflower steaks the Glow Chef way
Ingredients
for 1
- 2 cauliflower steaks (1 cm thick) cut from the center of a medium sized cauliflower
- 2 tsp extra virgin olive oil
- 1/2 tsp powdered garlic
- 1/2 tsp smoked paprika
- 1/2 tsp Herbes de Provence (dry mix)
- Sea salt and black pepper
To serve:
- Mixed green salad
- 1/4 avocado
- 1 tbsp lemon juice
- 1 tsp extra virgin olive oil
Method
Pre-heat the oven to 180º C (about 360º F), for about 10 minutes.
It’s about the time you need to wash the cauliflower, and cut and season your cauliflower steaks.
Note about washing a whole cauliflower: I found it helpful to let it rest for a bit on a dry kitchen towel, before cutting the steaks, as it kept quite a bit of water inside.
Line a metal tray with baking paper and place your cauliflower steaks on it, taking care not to break them.
Season both sides of the steaks, or do like me: I season the tray itself before placing the steaks on the paper. Then, I just add seasoning to the top side.
Place your tray in the oven and bake for 10 minutes. Time it.
Take the tray out and flip the steaks. Bake for 10 more minutes.
The smell of the spices is delicious, your kitchen will be filled with the smoky aroma.
Meanwhile, prepare your salad and avocado. Season with the extra virgin olive oil and the lemon juice.
When serving, squeeze a bit more of lemon juice on the cauliflower. It will help bring out the caramelized veggie flavor.
